OK, I have been bad about posting the last couple of weeks. This is for two reasons: number one, I've been really busy, and number two, most of what I have cooked at home is either improvised or just not new. I've had tons of fruit and vegetables to deal with from my CSA, so I've been doing a lot of veggie burritos and other things. And almost every weekend, I've been making something like this: my veggie omelette!
Let me tell you about how I made this one, and then I'll go into other vegetables I've used. For this one, I sauteed some leeks (from the CSA), then added some collard greens and continued to stir the vegetables until the collards were wilted.
Then I cracked five eggs directly into the pan and stirred to incorporate all the vegetables. Then I crowded it all onto one side of the pan and sprinkled with a heap of Gorgonzola cheese. Mmm.
I served this with a peach for each of us and half of a goat cheese & basil cupcake I picked up from More the other day.
So, as I said before, I have been making one of these per week to use up CSA eggs and greens. Usually I use Swiss chard, but today I had leeks and collards. You can also use green beans, beet greens, spinach, cabbage, onions, or anything else you can think of.
