I realize I haven't posted for a while; the reason is that I have been lazy, and have also been making a lot of old, comfy dishes and nothing new worth posting about. But this was a really fun dinner: homemade nachos!
I laid out a serving of tortilla chips on a plate, browned 1 lb. ground beef with spices, and heated up vegetarian refried beans. (I am still not a vegetarian; I just prefer my beans sans lard. The beef came from the quarter grass-fed cow I bought.) I spread the chips with the beans, then the beef, then cheese, chopped red onions, and pickled jalapenos.
This was DELICIOUS! I am always lazy and let me and Dave make our own tacos, but eating the stuff nacho-style was great, too. I'm going to have to do this more often.
