Steak & blue cheese salad

I have been wanting to do a steak salad for a while, ever since I saw it in Ina's book.  I didn't follow an Ina recipe, but my style of winging it turned out a delicious salad.


I had bought two huge tubs of lettuce, so I mixed them for the base of greens.  I added a handful of dried cranberries and some Shropshire blue cheese (a zingy blue cheese that is actually orange instead of white).  Now for the steaks.


These were the top sirloin steaks that have been in my deep freeze since my CSA ended last year.  Lately, I have been finding that I just like pan-frying my steaks in butter (about a tablespoon for each steak).  It keeps the moisture in the steak and cooks it very nice and evenly.


Well, all that butter and steak juice produced some lovely pan juices, as you can imagine, so I deglazed the pan with some wine and added some horseradish, Dijon mustard, and pepper.  Reduced a little bit and you have a nice salad dressing.




Dave was really drooling over this one.  After I cut up the steaks, he actually ate all the edible meat off of the gristle and stuff.  That man loves some steak.
