Chocolate ricotta pancakes

Another one from The Art of Breakfast:  chocolate ricotta pancakes!


These were quicker to make than I expected, and I have some ricotta I need to use up.  These contain eggs, ricotta, flour, orange liqueur, sugar, cocoa powder, and other tasty stuff.  You could also include mini chocolate chips to boost the chocolate flavor, so I added these all-chocolate sprinkles that are quite delicious.

You could also make your own orange maple syrup by mixing syrup with orange juice, but my husband does not believe in adulterating orange juice with anything, so we left it with plain maple syrup.  And they were delicious just the same.

Score another one for the brunch book!
